Chicken Long Rice

Chicken Long Rice combines tender chicken, clear glass noodles, and a delicious broth flavored with ginger, garlic, and soy sauce. It’s a popular choice at luaus and family gatherings.

Ingredients

  • 8 oz. Bean thread noodles
  • 1 Lb Chicken thighs Boneless & skinless
  • 32 oz. Chicken Broth
  • ¼ Cup Shoyu
  • 2 cloves Garlic Minced
  • 2 Inch Ginger Minced
  • 1 Tbsp Sugar
  • Green onion

Instructions

  • In a large stockpot combine chicken broth, shoyu, garlic, ginger, & sugar.
  • Once sugar is dissolved and broth is coming to a boil add in chicken thighs. Reduce heat, cover, and simmer for about 30 minutes.
  • Shred chicken then add cellphone noodles to stock, cover with lid, and simmer for another 7-10 minutes until the noodles are soft. Add more chicken broth if needed since the noodles will soak up most of the sauce. Garnish with green onions and enjoy!!
