Banana Lumpia

Sweet Banana's rolled in brown sugar, wrapped in egg roll wrapper then fried to perfection.  One of my favorite desserts that when hot, pairs perfectly with vanilla ice cream.

Ingredients

  • vegetable oil for frying
  • 5 Bananas cut into 4ths
  • 1 pack lumpia wrappers (egg roll wrappers)
  • 1/4 cup brown sugar
  • pinch cinnamon optional
  • pinch nutmeg optional
  • small bowl of water

Instructions

  • Start by peeling your bananas and cutting them in half down the middle and cut them in half long ways again so they are lying flat but still long.
  • Mix your brown sugar, nutmeg, and cinnamon together (if you're using) in bowl. Coat each slice of banana in this mixture making sure all sides of banana have sugar mixture. Set a small bowl of water on the side to dip your fingers in when you wrap the lumpia.
  • Take one banana at a time and place below the middle of one lumpia wrapper with a corner facing you. Fold that corner upwards over the banana and tuck. Keep rolling until it hits the middle. Fold both corners in and continue rolling until it hits the top corner. Before finishing the roll dab your fingers in water and spread over top corner then complete the roll so it will stick.
  • Continue will all bananas until you have none left.
  • Heat up oil in skillet maybe 1-2 inches high. Once oil is ready, fry Lumpia until golden brown and crispy on both sides. Set on napkin once done to let the rest of the oil drain.
  • Eat as is or serve with ice cream!! Enjoy while its hot!
