Kimchi, Kimchee, or Kim Chee?
In Hawaii, I’ve seen so many different ways to spell Kimchi but I mostly use ‘Kimchi’. There is actually no difference in the dish itself, despite the variations in spelling. Translation from Korean to English can result in multiple spellings, as there are sometimes no direct equivalents in English. ‘Kimchi’ is the most common and widely accepted way to spell it. ‘Kimchee’ is an older variant and translation, while ‘Kim Chee’ is the least common way to spell it.
Where did Kimchi Fried Rice Come From?
Also known as Kimchi Bokkeumbap in Korean, originates from Korea. It is likely that it emerged as a solution to avoid wasting food. Kimchi is a staple in Korea and the practice of frying leftover rice with different ingredients has been around for a long time. This dish has become very popular globally, especially in Hawaii, where there is a huge Korean influence.
Difference of Hawaii Kimchi Fried Rice
I’d say Kimchi Fried Rice usually tastes similar no matter where you go, but in Hawaii it often includes spam. It’s their way of blending local flavors into different dishes. Spam is not just popular in Hawaii but it is also very accessible. I always thought it was so interesting to see how dishes change with different cultures and regions in the world.

Main Recipe Ingredients
- Kimchi – We use Napa Cabbage Kimchi for this recipe! I’m pretty picky when it comes to Kimchi, I like mines spicier and a little more fermented. I think finding a brand that you like is very important! I prefer homemade Kimchi but sometimes thats hard to find so right now my favorite is Jongga Kimchi from Costco!
- Rice – It is super important to use day old rice because you don’t want it to become mushy.
- Spam – I like using regular spam no flavor, to me the off brands don’t taste the same. Also feel free to use another protein that you like instead, it just won’t be Hawaii Kimchi Fried Rice.
- Gochujang – Or Korean Chili Paste. You can get from any Asian Market! Theres different heat levels so get whichever you think would be best for you. I usually get the really spicy one and it is pretty spicy. It also depends on how much you add to your dishes that can determine how spicy it will become.
- Shoyu – Also known as soy sauce, my favorite brand is Aloha shoyu!
- Sesame oil – I prefer Kodoya Pure sesame oil but it doesn’t have to be this brand.
How to Make the Best Fried Rice
I am saying this again because it’s super important when making any fried rice but USE DAY OLD RICE!! Day-old rice is less moist and sticky compared to freshly cooked rice. When you fry fresh rice, it tends to turn mushy instead of crispy. Also, as day-old rice absorbs additional liquid ingredients, it regains just the right amount of moisture. Plus, the flavor changes slightly after sitting in the fridge, adding depth and complexity to your dish. And it’s easier to handle, helping you avoid clumpy, sticky fried rice.
Substitutes?
Let’s go over some substitutes that you can use for this dish. I think the biggest one would probably be what to use instead of spam! I know not everyone is a fan of spam so you can use bacon, sausage (Portuguese sausage would be best), Tofu, Chicken, and Shrimp. You can really substitute it with any protein you’d like but these are just some ideas!

You might wonder if this dish is too spicy because of the kimchi. But surprisingly, it’s not! The spiciness actually depends on how much Gojuchang (Korean chili paste) you use. The more you add, the spicier it gets. Some recipes even include melted cheese, which can make the dish a bit heavier but also helps to reduce the spice. If you want to try it with cheese, I’d suggest starting with a small portion to see how you like it

Kimchi Fried Rice
Ingredients
- 1 Tbsp olive oil
- ½ onion chopped
- 1 can Spam cut into cubes
- 6 oz Kimchi chopped
- 16 oz Rice day old
- 1½ Tbsp Gochujang
- 1 Tbsp shoyu
- 1 Tbsp sesame oil
- 2 stalks green onion chopped
- 1 egg
Instructions
- In a skillet, on medium heat, add chopped onion until fragrant.
- Add cubed spam and cook until a nice brown color. Then Add in Kimchi.
- Once that is cooked through, add in Rice and mix well. Add gochujang, shoyu, and sesame oil. Mix thoroughly.
- Top off with some green onion and serve yourself a bowl! Add a sunny Side egg on top! enjoy!
