The History Of Chicken Long Rice
Chicken Long Rice was influenced by Chinese immigrants who came to Hawai‘i in the 19th century. They brought with them their traditional noodle soup, which typically included long, thin rice noodles, chicken, ginger, and green onions. Over time, the dish was adapted to local tastes and ingredients.
Instead of rice noodles, locals began using cellophane or glass noodles, which became known as “long rice.” The recipe was simplified and modified to include familiar Hawaiian flavors like soy sauce, garlic, and ginger. You can find Chicken Long Rice at luaus, potlucks, and family gatherings, often served alongside Kalua pig and lomi salmon. It’s definitely one of my favorite things to eat whenever I go back home.

- Cellophane Noodles – you can probably find this at your local Asian grocery store.
- Chicken Thighs
- Chicken Broth
- Shoyu – I like to use aloha shoyu brand.
How to eat Chicken Long Rice/Serve it
I usually just eat it as is! Sometimes you’ll also see it along with poi, laulau, kalua pig, and rice. It reminds me of the Hawaiian version of Chicken noodle soup. So good and so comforting! It’s also the perfect thing to take to parties or potlucks!

Chicken Long Rice
Ingredients
- 8 oz. Bean thread noodles
- 1 Lb Chicken thighs Boneless & skinless
- 32 oz. Chicken Broth
- ¼ Cup Shoyu
- 2 cloves Garlic Minced
- 2 Inch Ginger Minced
- 1 Tbsp Sugar
- Green onion
Instructions
- In a large stockpot combine chicken broth, shoyu, garlic, ginger, & sugar.
- Once sugar is dissolved and broth is coming to a boil add in chicken thighs. Reduce heat, cover, and simmer for about 30 minutes.
- Shred chicken then add cellphone noodles to stock, cover with lid, and simmer for another 7-10 minutes until the noodles are soft. Add more chicken broth if needed since the noodles will soak up most of the sauce. Garnish with green onions and enjoy!!
