What Is Chicken Long Rice?

Chicken Long Rice combines tender chicken simmered in a delicious broth with clear glass noodles. The broth is typically flavored with ginger, garlic, and soy sauce, creating a savory, slightly tangy taste. This comforting dish is easy to make and loved by many in Hawai‘i.

The History Of Chicken Long Rice

Chicken Long Rice was influenced by Chinese immigrants who came to Hawai‘i in the 19th century. They brought with them their traditional noodle soup, which typically included long, thin rice noodles, chicken, ginger, and green onions. Over time, the dish was adapted to local tastes and ingredients.

Instead of rice noodles, locals began using cellophane or glass noodles, which became known as “long rice.” The recipe was simplified and modified to include familiar Hawaiian flavors like soy sauce, garlic, and ginger. You can find Chicken Long Rice at luaus, potlucks, and family gatherings, often served alongside Kalua pig and lomi salmon. It’s definitely one of my favorite things to eat whenever I go back home.

What You’ll Need To Make It

  • Cellophane Noodles – you can probably find this at your local Asian grocery store.
  • Chicken Thighs
  • Chicken Broth
  • Shoyu – I like to use aloha shoyu brand.

How to eat Chicken Long Rice/Serve it

I usually just eat it as is! Sometimes you’ll also see it along with poi, laulau, kalua pig, and rice. It reminds me of the Hawaiian version of Chicken noodle soup. So good and so comforting! It’s also the perfect thing to take to parties or potlucks!
